The owner of the shop, Roshan Kumar told that his father had started setting up this cart 12 years ago. Which they now handle. Anarsa is sold to him at the rate of Rs.300 per kg and Rs.15 per piece. Director Roshan Kumar says that first of all basmati rice is thoroughly washed and ground coarsely in a mixer. Lui is prepared by roasting flour and sugar mixed in ground rice. Similarly khoya is also fried in sugar syrup. After that, khova is filled in the prepared dough, wrapped in sesame and left in hot oil. Then it gets cooked in 5 minutes. It is served hot to the customers. It is tastier hot.
